There are so many ways to make fried rice. With sauce , without sauce, with different vegetables, with different ways of frying those vegetables.
Fried rice can be eaten with different side dishes also like-
Dry Manchurian , Grilled Tofu, Chilly Tofu, gravy Manchurian etc.
This vegan rice recipe is easy one, only you need some vegetables which you can replace with other if you don’t have veggies mentioned below.
Tips to make rice
- Use non sticky rice like any variety of basmati.
- Don’t put much water and cook in an open pot to get rid of starch.
- Let it cool down before frying.
Vegetables you can use
You can use your favorite veggies like cabbage, bell pepper, peas, tomato, beans, corns, baby corns etc. You can use mix and match as per availability.
Ingredients-
Rice-2 Cups
Corn-1/4th cup
Capsicum-1
Peas-1/4th cup
Cabbage- ½ bowl
Green Chilies-2
Salt to taste
Cumin seeds-1teaspoon
Black Mustard seeds-1teaspoon
Hing-pinch
Red pepper-2tablespoons
Turmeric powder-1Tablespoon
Bay leaf-1
Garam Masala-2 Tablespoons
Oil-1/4th cup
Lemon Juice
Coriander to garnish

Recipe-
- Heat oil in a non sticky pan on high flame.
- For tempering add hind, cumin seeds,black mustered seeds and bay leaf.
- Add green chillies and other chopped vegetables and stir fry.
- Add salt, red pepper and garam masala and keep frying for 3-4 minutes.
- Mix rice with fried vegetables and keep on stove for 3- 5 minutes.
- Add lemon juice and garnish with coriander and serve.
