Indian People believe that sweets can be prepared with dairy only. As it requires ghee or cream or milk. But this is because you haven’t heard of Shrikhand made with Coconut pulp yet.
Indians and desserts have a very close relation. We need sweets after eating food. And We know very well that many of the sweet dishes are made with dairy. Since we have learned this way we believe there is no other way to prepare any dish.
Dairy sweets are quite popular in India and many households still make desserts at home. Indian Households believe that desserts are not prepared with ingredients but also love.
In the span of 3 years after I turned vegan , I have tried hundreds of Indian dishes making at home.ofcourse that includes sweets too.
Shrikhand is normally made with dairy milk but this vegan shrikhand is prepared with coconut pulp. Let’s check the recipe-
Green Coconut pulp-250grm
Small Raw mango -1/2
Cardamom powder -2teaspoon
Try finding green coconut pulp which is thick. Now grind that in a grinder with a little amount of water if needed to make a thick paste. Coconut water can be used instead of plain water.
Now grind chopped raw mango in a different jar. Raw mango is used to make shrikhand’s little sour taste. Put the sugar with raw mango in the jar so it will help in grinding this. Make a thick paste. Add more sugar if needed.
Now put both the paste in the jar and grind again.
Mix saffron as according to color and fragrance needed. Maximum 1teaspoon will be fine. Also, mix 2teaspoons cardamom powder in the paste.
