Buttermilk for a gujrati is as must as having water after food. In gujrati it is called “Chhachh” or “Chhas”. Being a gujju myself I know that every Gujrati house has buttermilk compulsory like lassi for Punjabi.
In the journey of becoming vegan I tried to find many alternatives for milk products that I used to consume and one was buttermilk in them.
The best thing about vegan buttermilk is, we have many different plant-based kinds of milk available, so there can be many ways to prepare buttermilk. Every milk gives a different taste. It is sour and salty in taste because of lemon and salts.
This buttermilk I prepared from almond milk as I normally have that available for tea.
Ingredients for Buttermilk are-
Plant based Milk – 1cup
Water- 1/2 cup
Lemon juice- 1tbsp
Pink salt- 1tsp
Salt -1tsp
Roasted cumin powder- 1/2tsp
Recipe-
Mix water and milk.
Add lemon juice and salts.
Mix well.
Sprinkle cumin powder .
Keep in fridge for 10mins and serve.
One can temper it with neem leaves. For that, you will need –
Neem leaves 4-5
Mustered seeds- 1tsp
Oil -2tsp
Heat oil
Add mustered seeds and neem leaves.
Put that on butter milk on top with roasted cumin powder.
