In the series of making cow milk alternatives at home, next is ‘soybean milk’.
Soy milk is so inexpensive, easy to make and you will need only 2 ingredients- ‘Soybean and water’. You can use milk for making tea, coffee, tofu (soy paneer), curd, and in many more items. Scratch from milk can be used to make Namkeen senv ( Indian spicy snack), Dhokla, soybean sticks, etc.
You can find soy milk easily in supermarkets but homemade milk is more healthy as it is fresh and chemical-free. Use of Soy is a little controversial subject, it has both supporters and detractors but in Asia it’s consumption is still high.
To make soy milk-
Soak soybean 1 cup overnight.
Next day drain it’s water, rub soybeans with hands and remove its skin.
Wash again 1-2 times properly.
Now blend beans in a mixture for with 2 cups of water(use more water if needed).
Make a smooth paste and then add 1 cup of water and blend again.
Strain the blended mixture using a nut milk bag or a strainer.
Use milk to make different beverages or tofu.
Note- Do boil soy milk before using.
*In the process you will get near 1/2 cup soy paste/scratch.
Check what you can make from soy scratch remained from milk-
