This bitter gourd pickle or Karele ka achar is different from pickles we generally make. It is instant and can be prepared in 20 minutes only.
Indian pickles are made with so many spices, that explodes very different flavors. Indian pickles generally can be stored for months and it actually gets better in taste as time passes.
This karele ka achar actually has so many different flavors. It is bitter because of bitter gourd, sour because of raw mango, and has many flavors of spices used in making.
It can be eaten with Chapati, parathas, rice, etc, and not to mention that we love this Indian achar because it is vegan.
To make this pickle you will need-
Ingredients-
Bitter gourd- 250grams
Raw mango-50gram
Mustered oil- 3TBSP
fenugreek seeds- 1/2TBSP
Mustered seeds yellow- 1TBSP
Mustered seeds black- 1TBSP
Black pepper- 8-10
Red pepper powder- 1/2TBSP
Hing- 1/2TSP
Turmeric powder- 1/4TBSP
Salt- 2TBSP (According to taste)
Recipe-
To start with achar, first, soak chopped bitter gourd in salt for 10-15 minutes. Then wash with water.
Take 1tbsp oil in a pot and keep on low flame, add bitter gourd and saute for 1-2 minutes, so that it absorbs all water.
Take a different pot, add 2TBSP oil and heat on high flame. Let it Cool it down for few seconds then add fenugreek seeds, black pepper, and hing.
Then let the oil cool down for few more seconds and add all remaining spices except salt.
Add chopped bitter gourd and garnished raw mango, add salt and then mix properly.
