Butter Milk known as chaas in Hindi is the Indian beverage, often served with meals. It is a cooling, refreshing. It is called by different names across India. Vegan Buttermilk or plant based buttermilk is dairy free option with varieties.
Dairy buttermilk is the fermented liquid left after churning cream into butter. But to make vegan buttermilk we don’t need to work this much.
As there are many options to make different types of curd. Similarly there are many options for making buttermilk.
Traditional Indian chaas is made by blending cold dairy yogurt with water and nearly any spices you like.
Chhas or buttermilk is consumed during summers after lunch. Though its not the case with gujratis. Being a gujju I have seen my grand mother having chhas all the year.
Cold, refreshing chhas is much better than all the soft drinks.
After becoming vegan I missed chhas very much. With the time I learned different ways to make buttermilk and varieties too.
Peanut buttermilk is prepared with the peanut curd. This is vegan option for all who do not consume dairy but miss having buttermilk. I have shared recipe of how to make peanut curd at home. The process of making vegan butter milk is simpler and less time consuming.

Buttermilk Recipe-
Now to make buttermilk add water in the curd and blend. Mix pink salt, regular salt and lemon for tangy flavour. Sprinkle some roasted jeera powder and chopped coriander for better taste.
Coconut buttermilk is the simplest and quickest to make.
Recipe- To make the buttermilk you only need coconut pulp (green coconut or raw) grind it with water. Add pink salt, regular salt and squeeze lemon. Sprinkle some roasted jeera powder and chopped coriander for better taste.
Almond buttermilk is prepared with almond milk only. You do not need to set the curd for it. Just prepare almond milk and it will be enough for making curd.

Recipe-
Now to make buttermilk add some water in the milk if your milk is thick otherwise it is fine. Add pink salt, regular salt and squeeze lemon. Sprinkle some roasted jeera powder and chopped coriander for taste. You can put some ice cubes for making it cool or put in the refrigerator too.
Whichever vegan buttermilk recipe you have made, garnish it with mint leaves or coriander leaves and serve cold.
You can also store the vegan buttermilk in the refrigerator and serve later. Just be sure to use within one or two days for the freshest taste.
