Uttapam is mostly made from the leftover of Dosa or idli batter but it can be made instantly also. Uttapam is made with semolina and vegetables.
Since batter of uttapam is very similar to Dosa, So if you have a batter of dosa remaining or you are not in the mood of eating something crispy then you can make uttapams. Generally, It is made from Rice and Urad dal but we are making instant uttapam hence suji is used instead of rice and urad dal.
It’s the batter is thick from the dosa as dosa needs to be thin and must have crisp. On the opposite uttapams are not crispy but thick like paratha. And you can try different vegetables for the topping.
I am going to show the recipe for tomato uttapam here. Since no curd is used for making uttapam this is suitable for vegans. It can be prepared in less oil hence it is a healthy option for breakfast or dinner.
Ingredients-
Suji(Semolina) – 2cups
Fruit Soda powder – 1Tablespoon
Tomato -1
Green chilly-2
Salt to taste
Oil 1/2 cup
Water 3cups
Chutney-1/2 cup
To prepare the base of uttapam, first put suji in a bowl then add water and keep aside for 20-30 mins.
Meanwhile, chop all the vegetables. Since this is tomato uttapam only tomato and chilly are used but different vegetables can be used for topping. Mix salt and red pepper in these chopped veggies.
Now heat up a nonstick pan on the stove on a medium flame and till it starts heating add fruit soda in Suji batter and add salt too. Mix it. Make sure it is not too runny or too thick.
Now check if the pan is hot properly then spread 1 tablespoon oil on the pan. Now spread batter 1big round spoon or 1 small bowl as much big you want it to be or your pan is. Put a few chopped tomatoes and chilies on the top of the batter. Now cover it for 1-2 minutes.
Turn the other side when it is brown. Drizzle oil and keep on another side for 1-2 minutes. If both sides start looking brown uttapam is cooked.
Serve this with chutney. on You can spread chutney on uttapam too.
