Dosa, Crispy pancakes are staple food from south India. In the rest of India is hugely popular too. There are many south Indian restaurants chain in all over India.
What is dosa??
Dosa is made with rice and Urad daal, make its paste and then you have to soak this paste for at least 8-10 hours to get fermentation but suppose you forgot to soak it overnight or guest tells you that they are coming in the evening and you want to make dosa then what??
well, there is another way also to make dosa where you won’t have to wait for hours. It is instant dosa which can be prepared from Suji (semolina). It will be ready in 1.5- hours to 2 hours.
I love south Indian food mostly because like many other dishes Dosa is vegan too. No dairy stuff is needed.
How to serve ?
Dosa can be prepared either plain which is crispy or with different types of stuffing with vegetables. It is eaten with Sambhar which is similar to daal(Lentils) but made with different vegetables in this like drumsticks, tomato, etc. There are several chutneys (dips) served with dosa like coriander chutney, coconut chutney. Stuffed dosa is normally eaten without sambhar and with chutneys only.
Lets jump to this instant dosa Recipe –
Ingredients- (2 servings)
Suji (Semolina)- 2cups
Salt to taste
Soak Semolina in water for 1 to 1.5 hours.
Heat a non stick pan on medium flame, spread some oil on the pan. While it’s heating mix salt and Soda in the suji batter. Keep suji little runny not so thick. It has to spread properly on the non stick pan in a thin layer.
Now spread suji batter on the pan with a small bowl or big round spoon. Don’t take much time in spreading otherwise it will stick in the pan. Spread properly in a thin layer.
Keep on the medium flame. Spread oils on the outline it needed. When its brown from the bottom it is ready.
Now Serve with chutney and Sambhar.
