Soybean plays a very important part of a vegan’s life. Soya has given every inch of it into various food styles, either it is about making soy milk, curd or tofu, or using chunks and beans for curry it is used everywhere.
We know soybean is a very rich source of protein and a decent source of carbs and fat. Hence used as a plant-based substitute for meat and eggs.
Though sometimes it creates digestive and skin problems hence much intake is avoided.
There are many dishes or food items prepared with soya. Like Soya milk, curd, tofu (Soy paneer), oil is extracted from soya beans. Soya chunks are used to make curries or used in different dishes. We can make different snacks from scratch after making milk like Senv, Dhokla, or kurkure.
There are many methods to make curry from soybean. Green beans can be used or dry, with gravy or without gravy, etc.
In this recipe, I will describe how to make dry Soybean curry(Sabzi). All you have to do is soak soybeans for 7-8 hours then boil in a pressure cooker and cook in vegetable oil. It is very easy to make and quick once boiled.
Asafoetida(Hing) – pinch
Red pepper powder- 1/2tbsp
Turmeric powder- 1/2tbsp
Dry coriander powder- 1tbsp
Salt to taste
Lemon juice-1tbsp (optional)
